Get a glimpse of Shinji's new digs

A Japanese-inspired wood trellis accents the gallery that leads into the new Shinji by Kanesaka restaurant at Carlton Hotel. The walkway, flanked by dark-wood panels to the left, features a garden-like granite ishidatami or stone-paved floor.

ST Food, The Straits Times’ food website, had a sneak peek at the restaurant’s new premises in the hotel’s lobby. It relocated from the nearby Raffles Hotel and opens tomorrow.

In the video, get a glimpse of the high-end sushi restaurant’s new digs. It received a Gold accolade at last Wednesday night’s Best Asian Restaurants awards, which are part of year-long gourmet series Asian Masters and presented by The Straits Times and Lianhe Zaobao.

Shinji’s master chef Koichiro Oshino, 47, talks about his philosophy of treasuring every moment and encounter, which he also translates into his sushi craft.

Close to $1 million was spent on this new space, which also includes a bar called Joji located outside the restaurant.

The restaurant features the familiar Japanese screens, wall panels and bamboo lattice ceilings that had adorned the previous space at Raffles Hotel. The textured walls are tsuchi kabe, a mixture of sand and straw, which are common in traditional Japanese teahouses and temples.

Only two things have been reused here – the sushi counters and front door. Some 17 men carted the main 7.6m-long wooden counter, carved out of a single piece of 220-year-old hinoki or Japanese cypress, across the road to the new space one night.

Other winners of the Best Asian Restaurants awards are featured in another video, rounding up last Wednesday’s gala reception which was held at the Mandarin Orchard Singapore ballroom. It was a night of camaraderie among chefs, restaurateurs and food and beverage professionals in Singapore’s Asian restaurant scene.

ST Food was launched last November and showcases videos, recipes, food features and restaurant and hawker stall reviews. It also picks up stories from ST’s sister publications The New Paper and The Business Times as well as features and recipes from regional and international publications such as The New York Times and The Washington Post.
