Set amidst the lush rainforest canopy and elevated above the natural surroundings of Banyan Tree Bintan, this special culinary collaboration showcases the richness and diversity of Indonesia’s culinary heritage through a contemporary lens. Over two memorable evenings, guests will experience a thoughtfully curated menu that brings together the talents of two chefs who share a passion for authentic flavours, innovative techniques, and a deep respect for local ingredients.

Chef Mandif Warokka is widely recognised as one of Indonesia’s most influential culinary figures. Known for pioneering progressive Indonesian cuisine through acclaimed restaurants such as Blanco par Mandif and Teatro Gastroteque in Bali, Chef Mandif has dedicated his career to elevating Indonesian gastronomy on the global stage. His achievements include representing Indonesia at the prestigious Bocuse d’Or 2021 in Lyon, France, alongside numerous accolades throughout his distinguished culinary journey.

Joining him is Chef Rizkan, the talented Sous Chef of Treetops Restaurant, who has been part of Banyan Tree Bintan’s culinary team for more than fourteen years. With extensive expertise in both Asian and Western cuisines, Chef Rizkan is known for his commitment to quality, consistency, and the creation of memorable dining experiences that reflect Banyan Tree’s signature standards of excellence.

Together, the chefs have crafted a multi-course degustation menu titled A Journey Through the Archipelago, a culinary narrative inspired by Indonesia’s diverse regions, cultures, and indigenous ingredients. The menu celebrates the stories and traditions behind Indonesia’s most iconic flavours while presenting them through refined and contemporary interpretations.

Guests will embark on A Journey Through the Archipelago, a multi-course dining experience that celebrates Indonesia’s diverse culinary heritage through contemporary interpretations of regional flavours. Showcasing highlights such as the spice-inspired Scallop “Papinyo”, inspired by the spice-rich islands of Maluku, the bold Aged Kiwami Wagyu Fillet 9+, and an elevated take on traditional Cassava Getug, transforming a beloved Indonesian street snack into an elegant dessert. The menu blends authentic ingredients, cultural storytelling, and modern culinary techniques to create a memorable gastronomic journey.

Complementing each course is a carefully selected wine pairing featuring premium Indonesian wines from Hatten Wines, thoughtfully chosen to enhance both the flavours and storytelling behind every dish.

“This collaboration reflects our ongoing commitment to celebrating Indonesia’s rich culinary heritage while creating exceptional dining experiences for our guests,” said Alpha Eldiansyah, Area General Manager, Laguna Bintan Resort. “Bringing together Chef Mandif’s visionary approach to Indonesian cuisine and Chef Rizkan’s deep understanding of our destination and guest preferences creates a truly memorable experience that embodies the spirit of Banyan Tree.”

More than a dining event, this exclusive collaboration celebrates Indonesia’s culinary identity, honoring time-honored traditions while embracing creativity and innovation. Through every course, guests will discover how ingredients, memories, and regional influences come together to tell the remarkable story of the Indonesian archipelago.
