Greg Sherman has been named as the director of food and beverage at The Walt Disney World Swan and Dolphin. In his new role, he will be responsible for managing the extensive food and beverage operation, which includes 23 outlets, at the complex.
Sherman’s extensive professional history spans more than 25 years in the food and beverage industry, encompassing various roles such as executive chef, general manager, regional general manager, and director of training and development. Beginning his tenure at Rosa Mexicano in 2014 as general manager, his remarkable leadership abilities and profound knowledge of the industry led him to advance to regional director of operations, vice president of operations, and chief operating officer.
Sherman, in his role as COO, oversaw restaurant, beverage, and culinary operations, private dining and sales, marketing, IT, finance, human resources, and training and development. Among his achievements were the successful launch of 6 new locations within a 16-month timeframe, supervision of 12 Rosa Mexicano establishments and 6 other concepts under the restaurant’s umbrella, direction of a team of more than 1,600 hourly associates and 130 managers, as well as the creation and execution of hospitality training initiatives.
